Here are some of our favorite Gluten and/or Casein Free Recipes that are quick to prepare and guaranteed to be a hit...even with the pickiest eaters!

These ingredients are the most frequently used in our Gluten/Casein Free recipes and can be found at your local health food market:
almond milk-vanilla, chocolate, original
zanthan gum
almond or other gluten free flour mixture
*almond flour will give you the best flavor
gluten free vanilla extract
Earth Balance Gluten/Casein free butter spread

For your desserts:
gluten free chocolate chips
gluten free marshmallows











Strawberry Banana Smoothie (Gluten & Casein Free)




                                                              Ingredients:
5 fresh or frozen strawberries
1 fresh or frozen banana, cut in half
1 cup vanilla almond milk
1 tbsp honey-optional
1 cup Ice
1/4 cup apple or orange juice
Method
Pour almond milk and juice into blender
add honey
add fruit
add ice

blend all ingredients well
Garnish with a strawberry
Enjoy!







There are so many other fruit options for this recipe, mango, blueberries, raspberries, etc.
You can also add 1 cup frozen yogurt if desired
If using frozen fruit, only 1/2 cup of ice is needed

Mini Turkey Tostada Salads (Gluten Free Only )


                                                                          Ingredients:

tostadas8 Corn Tortillas
1 cup Corn oil
          ½ head lettuce, chopped
Salsa
             1 can olives, sliced-optional
                      1 cup shredded monterey/jack cheese
            1 package ground turkey meat
              2 tbsp gluten free taco seasonings
1 tbsp minced garlic
sour cream-optional
              1 half avocado-optional, chopped
           1 can vegetarian refried beans
       ½ cup water
2 tbsp olive oil

                                                                                                    Chop and slice all vegetable toppings, set aside


Shells:
Heat corn oil on medium high heat to cook tortilla shells
add flat tortillas, cook for 3-4 minutes on each side until crisp
remove from oil, drain on paper towel

Meat:
Heat olive oil on medium high heat, add ground turkey
cook until slightly browned, then add garlic and seasonings
add water, reduce heat to simmer meat for 10 minutes

Beans:
Heat can of beans on low, add salt to taste

spread beans on tortilla shell first
add meat, then cheese
add toppings as desired

Cornbread
Gluten Free Cornbread (Gluten & Casein Free)

Ingredients:
   1 cup yellow cornmeal
          1 large egg, lightly beaten
                             1 cup Almond or other Gluten Free flour
    1 tbsp. baking powder
1 tsp. zanthan gum
½ tsp. salt
 1 cup almond milk
        ⅓ cup corn or olive oil
          1 tbsp. honey, optional
                              


PREHEAT OVEN TO 400° GREASE 8 INCH SQUARE BAKING PAN WITH OIL
COMBINE FLOUR, SALT, CORN MEAL, BAKING POWDER IN MEDIUM BOWL
COMBINE ALMOND MILK, EGG, HONEY, OIL IN SMALL BOWL. MIX WELL
ADD MILK MIXTURE TO FLOUR; STIR JUST UNTIL BLENDED. POUR INTO PREPARED PAN
BAKE FOR 20 TO 25 MINUTES OR UNTIL TOOTHPICK INSERTED COMES OUT CLEAN.
SERVE WARM.

FOR MUFFINS: SPOON BATTER INTO MUFFIN CUPS OR GREASED MUFFIN PAN. BAKE AT SAME TEMPERATURE FOR 15 MINUTES

Spinach Chicken (Gluten Free Only)
Ingredients:
2 packages Frozen chopped spinach
4 boneless skinless chicken breast halfs
1 cup cream cheese
3 tbsp. butter
2 tbsp. olive oil
      1 cup white cooking wine or chardonnay
       2 cups white or brown rice
 1 tbsp. minced garlic
   no- salt seasoning
  pepper
                                              



CUT CHICKEN BREAST INTO CHUNKS
MELT BUTTER AND OLIVE OIL IN SKILLET ON MEDIUM HEAT
ADD CHICKEN, COOK UNTIL NO LONGER PINK
ADD WINE, COVER AND SIMMER FOR 15 MINUTES ON LOW HEAT
ADD FROZEN SPINACH AND COVER FOR 10 MINUTES
ADD CREAM CHEESE AND SEASONINGS
STIR AND COOK 5 MINUTES
SERVE OVER RICE

Chocolate Chip Pancakes (Gluten & Casein Free)

                                                                       Ingredients:
1 cup Almond Flour
¾ cup Almond Milk
1 egg
1 tsp gluten free vanilla extract
1 tbsp cinnamon
½ tsp nutmeg
½ tsp zanthan gum
               1 cup gluten free chocolate chips-optional
butter cooking spray
Earth Balance butter spread

   Add all ingredients to mixing bowl
blend well by hand
spray non-stick pancake skillet
medium high heat
            pour batter onto heated skillet, turn over once bubbles form
                                                                           about 3-4 minutes cooking time each side

                                                                        1 tbsp baking soda
½ tsp salt
1 tsp zanthan gum
1 stick butter (softened)
2 eggs
2 tbsp Almond Milk-Vanilla or Original
1 tbsp Gluten free vanilla extract
2 cups Gluten Free chocolate chips
1 tbsp baking powder
1 ¼ cup brown sugar
¼ cup granulated sugar







COMBINE FLOUR, BAKING SODA, BAKING POWDER, SALT, ZANTHAN GUM-SET ASIDE

MIX BUTTER & SUGARS TOGETHER
ADD EGGS, ALMOND MILK, VANILLA
MIX IN FLOUR INGREDIENTS
FOLD IN CHOCOLATE CHIPS
DROP BY ROUNDED SPOONFULS ONTO UN GREASED COOKIE SHEET

BAKE FOR 12-15 MINUTES
COOL ON WIRE RACK FOR 6 MINUTES

Salmon Croquettes
(Gluten & Casein Free)

                                                      Ingredients:
                                                    3 cans Salmon, drained
½ green pepper, chopped
½ small onion, chopped
1 tsp garlic salt
½ tsp cumin
1 egg
2 tbsp Earth Balance butter
½ cup olive or corn oil
½ cup almond or other gluten free flour



MIX INGREDIENTS TOGETHER
ADD SEASONINGS

MELT BUTTER INTO COOKING OIL
GRAB HANDFULS OF MIXTURE, PRESS IN HAND TO FORM A PATTY. PUT IN HOT OIL -SPACED APART, COOK 5 MINUTES OR UNTIL BROWN ON ONE SIDE. TURN OVER, BROWN OTHER SIDE. LET PATTIES DRAIN ON PAPER TOWELS FOR THREE MINUTES.
